The Best Chicken Noodle Soup
This is a recipe for a classic chicken noodle soup that is both simple and easy to make:
Ingredients:
- 2 tablespoons olive oil
- 1 medium onion, diced
- 2 medium carrots, peeled and diced
- 2 stalks celery, diced
- 2 cloves garlic, minced
- 8 cups chicken broth
- 2 cups water
- 1 pound boneless, skinless chicken breasts
- 8 ounces egg noodles
- Salt and pepper, to taste
- Chopped fresh parsley, for garnish (optional)
Instructions:
- Heat the oil in a large pot over medium heat. Add the onion, carrots, celery, and garlic and cook until the vegetables are tender, about 5 minutes.
- Add the chicken broth and water to the pot and bring to a boil. Add the chicken breasts and reduce the heat to a simmer. Cook for 10-15 minutes, or until the chicken is cooked through.
- Remove the chicken from the pot and set aside to cool. When it is cool enough to handle, shred the chicken into small pieces and set aside.
- Bring the soup back to a boil and add the egg noodles. Cook for 8-10 minutes, or until the noodles are tender.
- Add the shredded chicken back to the pot and season with salt and pepper to taste. Garnish with chopped parsley, if desired.
