Beef Pot Roast
Ingredients:
- 2-3 pound beef roast (such as chuck roast or rump roast)
- 1 tablespoon vegetable oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 cup beef broth
- 1 cup red wine (optional)
- 2 tablespoons tomato paste
- 2 tablespoons Worcestershire sauce
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
Instructions:
- Preheat your oven to 300°F (150°C).
- Heat the oil in a large, oven-safe pot or Dutch oven over medium-high heat.
- Season the beef roast with salt and pepper on all sides.
- Place the roast in the pot and sear on all sides until it is browned, about 2-3 minutes per side.
- Remove the roast from the pot and set aside.
- In the same pot, add the onion and garlic and cook until the onion is translucent, about 5 minutes.
- Stir in the beef broth, red wine (if using), tomato paste, Worcestershire sauce, thyme, and bay leaf.
- Return the roast to the pot and bring the mixture to a simmer.
- Cover the pot with a lid and transfer it to the preheated oven.
- Cook the roast for 3-4 hours, or until it is tender and falls apart easily.
- When the roast is done, remove it from the pot and set it aside to rest.
- Skim any excess fat from the surface of the cooking liquid.
- To make the gravy, mix together 2 tablespoons of cornstarch with 1/4 cup of cold water in a small bowl.
- Stir the cornstarch mixture into the cooking liquid and bring the pot to a simmer.
- Cook the gravy for 5-10 minutes, or until it thickens to your desired consistency.
- Slice the roast and serve it with the gravy.
