Taquitos Recipe (Rolled Tacos)

Ingredients:

  • 1 tablespoon vegetable oil
  • 1 small onion, finely chopped
  • 1 garlic clove, minced
  • 1/2 pound ground beef or shredded cooked chicken
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon ground cumin
  • Salt and pepper, to taste
  • 8 small flour tortillas
  • 1 cup shredded cheese
  • Salsa, sour cream, and diced avocado, for serving (optional)

Instructions:

  1. Heat the oil in a large skillet over medium heat. Add the onion and garlic and cook until they are soft, about 5 minutes.
  2. Add the ground beef or chicken to the skillet and cook until it is browned, about 5-7 minutes. Stir in the chili powder, cumin, salt, and pepper.
  3. Lay a tortilla out on a flat surface and spoon about 2 tablespoons of the meat mixture onto the center of the tortilla. Sprinkle with a couple tablespoons of shredded cheese.
  4. Roll the tortilla tightly around the filling to form a taquito. Place the taquito seam-side down on a plate. Repeat with the remaining tortillas and filling.
  5. Heat a large skillet or griddle over medium heat. Place the taquitos seam-side down in the skillet and cook for 2-3 minutes, or until the bottom is golden brown. Carefully flip the taquitos and cook for an additional 2-3 minutes, or until the other side is golden brown.
  6. Serve the taquitos hot, with salsa, sour cream, and avocado if desired. Enjoy!

Note: Baking the taquitos is another option than frying them. On a baking sheet, arrange the taquitos seam-side down and preheat the oven to 425°F (220°C). Taquitos should be baked for 10 to 12 minutes, or until crisp and golden brown.
