Homemade Tortillas and Cheese Quesadillas
Ingredients:
Ingredients for Tortillas:
- 2 cups all-purpose flour
- 1 tsp salt
- 2 tsp baking powder
- 1 tsp olive oil
- 3/4 cup warm water
Instructions:
- In a large mixing bowl, combine the flour, salt, and baking powder. Stir to combine.
- Add the olive oil and warm water to the dry ingredients. Mix until a dough forms.
- Knead the dough for a few minutes, until it becomes smooth and elastic.
- Divide the dough into 8 equal pieces.
- Roll each piece of dough into a ball.
- On a lightly floured surface, use a rolling pin to roll each ball of dough into a thin circle.
- Heat a large, dry skillet over medium heat. Place a tortilla in the skillet and cook for about 1 minute, or until bubbles start to form on the surface. Flip the tortilla and cook for an additional minute. Repeat with the remaining tortillas.
To make a cheese quesadilla, you will need the following ingredients:
- 2 tortillas
- 1 cup grated cheese (such as cheddar or Monterey Jack)
- Optional fillings: diced cooked chicken, diced bell peppers, diced onions, diced tomatoes, etc.
Instructions:
- Preheat a large skillet over medium heat.
- Place one tortilla in the skillet. Sprinkle half of the grated cheese over the tortilla, leaving a small border around the edge. Add any optional fillings on top of the cheese.
- Place the second tortilla on top of the fillings and press down lightly.
- Cook the quesadilla for 2-3 minutes, or until the bottom tortilla is golden brown and the cheese is melted.
- Carefully flip the quesadilla and cook for an additional 2-3 minutes, or until the second side is golden brown.
- Cut the quesadilla into wedges and serve immediately.
